Happy & Hearty Soup

Ingredients
2 Tbs. olive oil
1 cup chopped yellow onion
3 cups gluten free chicken stock
12 ounces Happy Baby Stage 2 Broccoli, Pears & Peas
½ cup chopped fresh mint leaves, loosely packed
2 tsp. salt
½ tsp. freshly ground black pepper
1/3 cup low-fat sour cream
¼ cup freshly chopped chives, for a garnish
1 cup gluten free, chopped cooked smoked ham (optional)
Directions
Heat the oil in a large saucepan, add the onion, and cook over medium-low heat for 5-10 minutes, until the onion is tender. Add the chicken stock, increase the heat to high, and bring to a boil. Reduce heat to medium and add the Happy Baby S2 Broccoli, Peas & Pear. Stir until well-incorporated, about 1-2 minutes. Remove from heat and add salt, pepper and mint, then, using an immersion blender or in batches in a food processor, puree the soup on low speed. Once desired consistency is reached, whisk in the sour cream and then stir in ham (if using). Taste again for seasoning. Serve and garnish with chives. (Yield: 6 servings)
