Antipasto Rice

Ingredients


1 c. Carolina® White Rice


non-stick cooking spray


1 1/2 c. chicken broth


1/2 c. vegetable juice


1 tsp. basil leaves


1 tsp. oregano leaves


1/2 tsp. salt, optional


1 (14 oz.) can artichoke hearts, drained and quartered


1 (7 oz.) jar roasted red peppers, drained and chopped


2 Tbs. parsley, snipped


1/2 tsp. pepper


1/4 c. Parmesan cheese, grated


Directions


For the stove: In a large skillet, over medium heat, combine all ingredients, except Parmesan cheese. Bring to a boil. Reduce heat to simmer; simmer 20 minutes. Remove from heat. Fold in Parmesan cheese. For a rice cooker: Spray rice cooker with vegetable non-stick cooking spray. Add all ingredients except parmesan cheese. Cover and cook until rice cooker shuts off. Carefully remove cover. Fold in parmesan cheese. (Serves: 4-6)
