Veggie Fritters

Ingredients


1 packet Namaste Foods Italian Herb Coating Mix


3 cups coleslaw mix or grated zucchini & carrots combined


2 eggs or about 2/3 cup vegan mayonnaise


Directions


Combine ingredients in medium bowl. Drop by heaping spoonful into hot oil on medium heat. Press down a little and fry until golden brown on both sides, about 3-4 minutes on each side. Drain on paper towels.

*Dip in yogurt, sour cream, ranch or bleu cheese dressing. Garnish with chopped green onions or fresh herbs. Serve with an entrée or as a healthy finger food snack for kids.
