Hawaiian Chicken

¼ cup pineapple juice

2 Tbs. ketchup

2 Tbs. gluten free soy sauce

1 ½ tsp. minced peeled ginger

2 garlic cloves, minced

4 (6 oz.) skinless, boneless chicken breast halves

Cooking spray

Coarse salt & fresh ground black pepper, as desired

2 cups hot cooked Success®-Boil-in-Bag White Rice

¼ cup chopped fresh cilantro, as garnish


Combine first 5 ingredients to make marinade. Reserve ¼ cup marinade; place remaining marinade in a zip-top plastic bag. Add chicken to bag; seal. Chill at least 4 hours. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Remove chicken from bag; discard marinade in bag. Sprinkle chicken with salt & pepper. Add chicken to pan; baste with 2 Tbs. reserved marinade. Cook 6 minutes. Turn chicken over; baste with 2 Tbs. reserved marinade. Cook 6 minutes more or until chicken is cooked through and juices run clear. Serve chicken with rice and garnish with cilantro. (Serves: 4)
