One Pan Salmon Dinner

Ingredients


1 Tbs. shallots, minced


1 Tbs. fresh dill, chopped


1 cup gluten free vegetable broth


1 bag MinuteĀ® Multi-Grain Medley, uncooked


2 cups broccoli florets


4 (3 oz. each) salmon fillets, skin removed


Salt and ground black pepper, to taste


Directions


In a medium skillet combine shallots, dill and broth. Bring to a boil. Stir in Multi-Grain Medley. Top with broccoli and salmon. Season with salt and pepper. Cover, reduce heat to low and simmer 10 minutes. Substitute your favorite fresh herb for the dill. Decrease amount to 1/w tablespoon if using dried herbs. Substitute any vegetable for broccoli. If using frozen vegetables, thaw first. (Yield: 4 servings)
