Parsley and Tomato Salad

Ingredients


1 cup Mahatma® White Rice


2 cups cherry tomatoes, halved


1 cup chopped fresh parsley


½ cup chopped red onion


¼ cup chopped fresh mint leaves


1 tsp finely grated lemon zest


Greek black or green olives, optional


Dressing Ingredients


¼ cup fresh squeezed lemon juice


¼ cup extra virgin olive oil


½ tsp salt


¼ tsp cracked black pepper


Directions


Prepare rice according to package directions. In large bowl combine cooked rice with all salad ingredients; set aside. In 1-cup glass measure, place all dressing ingredients; mix well. Pour dressing over rice mixture; mix well. If desired, garnish with olives. (Serves: 4)
