Cheddar Chicken and Rice Skillet

½ cup zesty Italian reduced fat dressing

4 boneless skinless chicken breast halves (1 lb.) cut into strips

2 cups Minute® Brown Rice, uncooked

1 ¼ cups gluten free, fat free, reduced sodium chicken broth

2 cups small broccoli florets

1 ½ cups chopped tomato

1 cup 2% milk shredded reduced fat mild cheddar cheese

½ cup green onion, sliced


Heat dressing in large nonstick skillet on medium-high heat. Add chicken; cook and stir 2 minutes. Stir in rice, broth and broccoli. Bring to boil; cover. Reduce heat to low; simmer 5 minutes or until chicken is cooked through and rice is tender. Let stand covered, 5 minutes or until liquid is absorbed. Add tomatoes, cheese and green onion; stir until blended. Sprinkle with black pepper or a few dashes of hot pepper sauce, if desired. (Yield: 4 Servings)
