Tuna Steaks Veracruzana with Brown Rice and Corn Pilaf

Ingredients


1 tsp chili powder


4 (5 oz. each) tuna steaks


1 Tbs. oil


1 cup thick and chunky style salsa


2 cups water


2 cups Minute® Brown Rice, uncooked


1 (10 oz.) package frozen whole kernel corn, thawed


¼ cup fresh cilantro leaves, chopped


Directions


Sprinkle chili powder evenly over tuna. Heat oil in large skillet on medium-high heat. Add tuna; cook 2 minutes on each side. Add salsa. Reduce heat to medium-low; cover. Simmer 5 to 6 minutes or until tuna flakes easily with fork. Meanwhile, bring water to boil in medium saucepan. Add rice, corn and cilantro; cover. Cook 5 minutes. Remove from heat; let stand 5 minutes. Serve tuna and sauce over rice mixture. (Serves: 4)
