Santa Fe Black Beans and Rice

1 cup Gourmet House® White Rice or Organic White Rice

1 Tbs. oil

1 lb. medium lean ground beef

½ cup onions, chopped

½ cup green bell pepper, chopped

1 bay leaf

1 (14 ½ oz.) can Mexican-style stewed tomatoes

1 (15 oz.) can seasoned black beans, rinsed and drained

1 ½ tsp. ground cumin

1 tsp. garlic salt

1 Tbs. red wine vinegar

1 cup Jalapeño Monterey Jack cheese, shredded

Gluten free tortillas, optional


Prepare rice according to package directions. Divide equally into four serving bowls. In a large skillet, heat oil and brown ground beef until no longer pink. Add onions, peppers, and bay leaf. Continue cooking until vegetables are tender. Add tomatoes, black beans, and seasonings. Simmer for 2 minutes. Remove bay leaf. Stir in vinegar. Divide into 4 equal portions and serve over rice. Top each bowl with shredded cheese.
