Shrimp Chutney with Basmati Rice

Ingredients


1 cup Minute® Ready to Serve Basmati Rice


2 oz. cooked shrimp


2 Tbs. gluten free chutney


¼ cup plain yogurt


1 Tbs. chopped fresh cilantro leaves


1 Tbs. chopped peanuts


red onion slices


Directions


Heat rice according to package directions. In a small microwave-safe bowl, combine shrimp and chutney. Microwave on HIGH 30 seconds. Stir in yogurt, cilantro and rice. Top with peanuts. Then top with red onion slices, if desired. (Yield: 1-2 servings)
