Lemon-Parsley Baked Cod

Ingredients


4 cod fillets (6 oz. each)


3 Tbs. lemon juice


3 Tbs. melted butter


¼ cup gluten free all-purpose flour


Coarse salt, as desired


¼ tsp. paprika


¼ tsp. lemon-pepper seasoning


2 Tbs. fresh parsley, minced


2 tsp. grated lemon peel

Directions


Mix together lemon juice and melted butter in a shallow bowl. In a separate shallow bowl, mix together the gluten free flour and seasonings. Dip fillet in lemon juice mixture, then in flour mixture to coat both sides; shake off excess. Place the fish back into the refrigerator for about an hour before cooking. This will help the coating stick to the fish and create a crispier crust. Preheat oven to 400° F. Remove coated fish from refrigerator and place in a 9x13-inch baking dish prepared with cooking spray. Drizzle with remaining lemon juice mixture. Bake in preheated oven 20-25 minutes or until fish flakes easily with a fork. While fish is cooking, prepare rice according to package directions. Mix parsley and lemon peel and sprinkle over cooked fish and serve with rice. (Yield: 4 servings)
