Spicy Chicken Pasta

Ingredients


Coarse salt


1 c. Andriani Pipe Rigate – corn pasta


2 cooked boneless, skinless chicken breast half, cut into 1-inch chunks


2 plum tomatoes, seeded and diced


4 Tbs. tomato paste


2 garlic cloves, minced


2 Tbs. Newman’s Own Organics – extra virgin olive oil


¼ tsp. red pepper flakes


4 c. baby spinach


2 Tbs. fresh lemon juice


Directions
Cook pasta according to package directions. Reserve ¼ c. pasta water. Drain pasta and return to pot with chicken. To pot, add tomato, tomato paste, garlic, oil, red-pepper flakes, and spinach; season with salt. Cook over medium, tossing, until spinach is barely wilted, about 1 minute. Remove pot from heat; stir in lemon juice and enough pasta water to create a thin sauce that coats pasta. Serve immediately.
