Pecan-Crusted Tilapia

1/4 cup pecans, well-toasted

1/2 cup gluten free seasoned breadcrumbs

Coarse salt & fresh ground black pepper, as desired

1/2 tsp. garlic powder

1/4 cup gluten free flour

1/2 cup buttermilk

2 tsp. gluten free hot sauce

4 tilapia fillets, about 6 oz. each

2 Tbs. olive oil for frying


Finely chop the toasted pecans. Combine the chopped pecans with the breadcrumbs, salt, pepper, and garlic powder on a plate or in a shallow bowl, and mix to combine. Place the gluten free flour in a separate shallow bowl. Whisk together the buttermilk and the hot sauce in another shallow bowl. After you’ve lined up the bowls, dredge both sides of a fish fillet in the flour and then in the buttermilk mixture. Finally, press both sides of the fish in the pecan and breadcrumb mixture and repeat with all pieces of fish. Add oil to a large pan and heat over medium heat. Cook the fish for about 3 minutes per side or until the bottom is golden brown and the fish flakes easily with a fork. (Yield: 4 servings)
