Chicken Blueberry Pecan Salad with Honey Mustard Vinaigrette

Ingredients


1 lb. rotisserie chicken removed & cut into bite-sized pieces


Salad Ingredients


6 cups red leaf lettuce


1 1/2 cups blueberries


1 Gala apple, cored and cut into bite-sized pieces


1/4 cup red onion, thinly sliced


1/2 cup pecans, toasted


Dressing Ingredients


1/4 cup honey


3 Tbs. whole-grain Dijon mustard


2 Tbs. apple cider vinegar


2 Tbs. olive oil


1 clove garlic, minced


1/2 tsp. kosher salt


1/8 tsp. pepper


Directions


In a small bowl, whisk honey, Dijon mustard, vinegar, olive oil, garlic, kosher salt & pepper until blended. In a large bowl, combine lettuce, blueberries, apple, red onion and pecans and toss with about 1/2 cup of the dressing. Arrange chicken over lettuce mixture and drizzle with additional dressing. (Yield: 4 servings)
