Creamy Tuscan Garlic Chicken

4 boneless skinless chicken breasts

2 Tbs. olive oil

1 cup heavy cream

1/2 cup gluten free chicken broth

1 tsp. garlic powder

1 tsp. Italian seasoning

1/2 cup parmesan cheese

1 cup spinach, chopped

1/2 cup sun dried tomatoes

Gluten free pasta, optional


In a large skillet add olive oil and heat the pan over medium high heat. Place the chicken into the skillet, reduce the heat to medium and cook until the meat is no longer pink and the juices run clear. This should take about 8-12 minutes flipping the chicken half-way through to brown on both sides. Remove chicken and set aside. Add the heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese to the skillet. Whisk together over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. Add the chicken back to the pan to warm. Serve chicken and sauce over gluten free pasta, if desired.

* If you are serving over pasta and like plenty of sauce, double the sauce recipe.
