Vegetarian Pizza

1 cup Mahatma® Whole Grain Brown Rice

2 each egg whites, beaten

2 cups mozzarella cheese, shredded (divided)

Non-stick cooking spray

2/3 cup gluten free pizza sauce

1 tsp. Italian seasoning

1/4 tsp. garlic powder

1 Tbs. ground black pepper

1/4 cup grated Parmesan cheese

1 cup mushrooms, sliced

3/4 cup zucchini, thinly sliced

1/4 cup sliced ripe olives

1/4 cup red pepper, cut into strips

1 Tbs. parsley, chopped


Preheat oven to 400┬║ F. Prepare rice according to package directions. Combine cooked rice, egg whites, and 1/3 cup Mozzarella cheese in a large bowl. Press into 12-inch greased pizza pan. Bake for 10 minutes. Combine pizza sauce, Italian seasoning, garlic powder and black pepper in a small bowl; spread over rice crust. Sprinkle with Parmesan cheese. Layer 1/3-cup Mozzarella cheese, mushrooms, zucchini, olives, red pepper and parsley. Top with remaining cheese. Bake for 10 minutes. (Yield: 4 servings)
