Ingredients
1 lb. Dried gluten free penne pasta
3 Tbs. extra virgin olive oil
2 cloves garlic, minced
1 (14.5 oz.) can diced tomatoes, undrained
½ c. gluten free shrimp sauce
1/3 c. sliced ripe olives
¼ c. capers
2 Tbs. fresh cilantro, chopped
2 Tbs. fresh basil, chopped
¼ tsp. fresh ground black pepper
Freshly grated Parmesan cheese, optional
Directions
Cook pasta according to package directions and drain. While pasta is cooking, heat olive oil in a large saucepan over medium-high heat. Add garlic; cook for 1 minute. Add tomatoes with juice, cocktail sauce, olives and capers. Reduce heat to low; cook, stirring occasionally, for 15 to 20 minutes. Stir in cilantro, basil and pepper; cook, stirring occasionally for 5 minutes. Toss with pasta and sprinkle with Parmesan cheese if desired.
