Wedding Cake

Hi! I am getting married in November and since I am a Celiac, my stepmother is going to make my cake. Question is.......does anyone have a great recipe for something like this? She makes wedding cakes on the side and will just make two layers/cake (top and a cutting cake) that's gluten free - everything else will be regular for the guest. Any suggestions?

My husband is Celiac and I also make wedding cakes. I was so happy to find "Gluten-Free Baking Classics" by Annalise G. Roberts. If you want a white cake try Lemon Layer Cake with lemon curd filling, page 38. Next page is Coconut Layer Cake. Page 54 is Carrot Cake, I make this with some alterations. These are so delicious why is your mother not making the whole cake gluten free? No one will know the difference, and they may go home feeling better. The best cake mix we have found is Really Great Food - Golden Cake Mix. This tastes like a "regular" cake! My sister and I nearly cried when we first tried it!
