My husband is Celiac and I also make wedding cakes. I was so happy to find "Gluten-Free Baking Classics" by Annalise G. Roberts. If you want a white cake try Lemon Layer Cake with lemon curd filling, page 38. Next page is Coconut Layer Cake. Page 54 is Carrot Cake, I make this with some alterations. These are so delicious why is your mother not making the whole cake gluten free? No one will know the difference, and they may go home feeling better.
