Paradise Banana Bread

½ cup butter
½ cup brown sugar
1 tsp gluten free vanilla
¾ tsp baking soda
½ tsp salt
2 mashed ripe bananas
6 oz Happy Family Happy Tot Banana, Peach & Mango
¼ cup of honey
2 large eggs
2 cups gluten free all purpose flour
½ cup of raisins or walnuts (optional)
Preheat oven to 350° F. In large bowl, beat together butter, sugar, vanilla, baking soda, and salt. Add bananas, Happy Tot Banana, Peach & Mango, honey, and eggs. Beat until smooth. Add gluten free flour and beat until smooth. Stir in walnuts or raisins if desired. Spoon batter into lightly greased 9x5 loaf pan, smoothing top. Let rest for 10 minutes at room temperature. Bake in preheated oven for 50 minutes, then cover with aluminum foil and bake additional 10 minutes or until toothpick comes out clean when inserted in center. Allow to cool 10 minutes before removing from pan. Cool on rack.
