Greek Salad

1 bunch mixed greens
1 green onion, chopped
1 package Hilary's Eat Well Hemp & Greens Burgers
4 Tbs Hilary's Eat Well Apple Fennel Dressing
12 cherry tomatoes, halved
6 kalamata olives, sliced
½ cucumber, halved & sliced
½ cup feta cheese or dairy free alternative
Place the mixed greens in a medium bowl. Add green onion, tomatoes, olives, cucumber, feta cheese (or dairy free alternative) and Hilary’s Eat Well Apple Fennel dressing. Mix ingredients. Place the salad on a plate, and top with Hilary’s Eat Well Hemp and Greens Burger.
*Want to make it fancy? Thinly slice a cucumber from top to bottom. Hold both ends in a circular shape and use a toothpick to hold in place. Put the cucumber circle on top of your burger and stuff with greens and toppings. You just took this salad from lunch in the office to a fancy dinner. Your date will be so impressed!
