Refreshing Tuna Rice Salad

1 cup Carolina® White Rice
1 can (7 oz.) tuna packed in water, drained and flaked
1/2 cup sliced ripe olives
1/4 cup fresh lime juice
3 Tbs. fresh cilantro leaves, chopped
1 Tbs. lemon pepper
1/2 cup cucumber, diced
1 cup gluten free Ranch salad dressing
Prepare rice according to package directions and set aside. In a large bowl, combine remaining ingredients. Fold in cooked rice. Adjust seasoning, if needed. May be served as a salad, as a sandwich, as a wrap with tortillas, or as a stuffing for tomatoes. (Yield: 6 servings)
