Brown Rice Frittata


Ingredients
1 bag Success® Brown Rice
Non-stick cooking spray
1/4 tsp salt
1/4 tsp pepper
1/4 tsp ground cumin powder
1 Tbs. butter
3/4 cup onion, chopped
1 boneless skinless chicken breast, cut into 1 inch cubes
1 1/2 cups mushrooms, sliced
1/4 cup roasted red pimiento, diced
3 eggs
1/4 cup milk
1 tsp. garlic powder
1/2 tsp. ground marjoram
1 cup mild Cheddar cheese, shredded
2 egg whites
Directions
Preheat oven to 350° F. Prepare rice according to package directions cooking only for 8 minutes. Drain. Spray a 9-inch pie plate with nonstick vegetable spray. In a medium bowl, combine egg whites with salt, pepper, cumin and cooked rice. Press into prepared pie plate. Bake for 10 minutes. Remove from oven. Heat butter in large nonstick skillet and cook onion for 1 minute. Add chicken to onion in skillet and cook 6 more minutes, stirring occasionally. Add mushrooms and pimiento to ingredients in skillet and cook another minute, stirring constantly. Transfer mixture to baked rice pie shell. Beat eggs in a small bowl and stir in milk, garlic powder and marjoram. Pour over chicken mixture and sprinkle shredded cheese over the top. Bake 30 minutes and let stand 10 minutes before serving.
