Creole Shrimp and Rice

1 cup Gourmet House® White Rice or Organic White Rice
¼ cup vegetable oil
1 onion, diced
1 green bell pepper, diced
2 each celery, chopped
1 crushed bay leaf
2 cups frozen okra
1 lb. medium shrimp, deveined and cleaned
2 cans (15 oz.) tomato sauce
2 tsp. sugar
1 tsp. salt
Prepare rice according to package directions. Sauté onion, green pepper, celery, bay leaf and okra in oil for 5 minutes. Add shrimp, sauté for 5 minutes. Add tomato sauce, sugar, and salt. Bring mixture to a boil. Cover and simmer for 10 minutes. Serve over hot cooked rice. (Yield: 4-6 servings)
