Taco Bowls

1 bag Success® Tri-Color Quinoa
1 package (1.25 oz.) gluten free dry taco seasoning mix
1 can (15 oz.) seasoned black beans, rinsed and drained
1 cup shredded sharp Cheddar cheese
1 1/2 cups shredded lettuce
1 each chopped tomato
2 each avocado, peeled and diced
Sour cream
Prepare quinoa according to package directions. Drain and place cooked quinoa in a bowl. Stir in taco seasoning; mixing well. Spoon cooked quinoa into 4 serving bowls; add remaining ingredients to each bowl. Top with salsa and sour cream, if desired. (Yield: 4 servings)
