Quinoa Pizza Bites

1 bag Success® Tri-Color Quinoa
3 large eggs
1 each garlic clove, minced
1/4 tsp. Italian seasoning
1 cup shredded mozzarella cheese
1 cup gluten free bread crumbs
1/2 cup pepperoni, chopped
1/4 tsp. crushed red pepper flakes (optional)
Marinara sauce
Prepare quinoa according to package directions. Preheat oven to 350ºF. Coat mini-muffin cups with non-stick cooking spray. Combine cooked quinoa with all remaining ingredients, mixing thoroughly. Divide mixture evenly among muffin cups. Bake 20 to 25 minutes or until golden brown. Transfer to cooling rack. Serve warm with marinara sauce.
