Black Bean Soft Tacos

Ingredients


1 medium onion, chopped


2 cloves garlic, minced


1 Tbs. canola oil
2 (15 oz.) cans black beans, rinsed and drained


1 Tbs. lime juice


2 tsp. chili powder


1 tsp. ground cumin


1 tsp. dried oregano


Coarse salt & fresh ground pepper, to taste


8 (6 inch) gluten free flour or corn tortillas, warmed


1/2 c. shredded reduced-fat Cheddar cheese


Spike's Santa Fe Packing Company Salsa-Chunky Chunky Salsa-Medium


Low-fat sour cream



Directions


In a nonstick skillet, sauté onion and garlic in oil until tender. Stir in the beans, lime juice, about 3/4 jar of salsa and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until mixture begins to thicken. Spoon about 1/2 c. on each tortilla; sprinkle with cheese. Fold one side of tortilla over filling. Garnish with sour cream and additional salsa. (Serves: 8)
