Baked Fish with Cheese Sauce and Rice

Ingredients


4 orange roughy fillets


1 Tbs. butter, melted


2 Tbs. gluten free, dry bread crumbs


1 Tbs. gluten free, all-purpose flour


3/4 c. low-fat milk


1/2 c. shredded cheddar cheese


1 tsp. Dijon mustard

Directions


Preheat oven to 400┬░ F. Place fish in an 11 x 7 inch baking dish sprayed with cooking spray. Brush fish with butter and sprinkle with bread crumbs on all sides. Place fish in oven and bake for 15-20 minutes or until fish flakes easily with a fork. While fish is baking, combine gluten free flour, and milk in a small saucepan over medium low heat. Bring to a boil: cook and stir for 2 minutes or until thickened. Continue stirring adding cheese and mustard until cheese is melted. Cook rice according to package directions. Top fish with cheese sauce and serve over rice. (Serves: 4)
