Quick n’ Easy Baked Sandwich

2 cups Namaste Biscuits, Piecrust & More

1 cup milk

1 egg

4 oz. gluten free deli turkey breast, thinly sliced

1 1/2 cups (6 oz.) shredded Cheddar cheese

5 slices cooked bacon

2 Tbs. butter or oil


Preheat oven to 400° F. Spray square baking dish, 8 x 8 x 2 inches with cooking spray. Stir Biscuit mix, milk, butter or oil and egg until blended. Spread half of the batter in baking dish. Top with turkey, 1 cup of the cheese and the bacon. Spread remaining batter over bacon. Bake uncovered about 15 minutes then sprinkle with remaining 1/2 c. of cheese. Return to oven and continue baking about 10-15 minutes more, until golden brown and center is set. Let stand 5 minutes before cutting. (Serves: 6)

*Variations: Add 1/4 tsp. or more to taste, of rosemary, sage, thyme or parsley and/or thinly sliced red onion to batter. You can use pepperoni, ham, roast beef, or any deli meat and/or other cheeses such as Gouda, Fontina, Monterey jack, etc.
