Crispy Rosemary Chicken

Ingredients


3/4 c. EREWHON® - Aztec Crunchy Corn & Amaranth Cereal or Crispy Brown Rice Cereal, crushed


1/2 tsp. garlic salt


1/2 tsp. dried rosemary leaves, crushed


Coarse salt & fresh ground pepper, to taste


4 small boneless skinless chicken breast halves


1 Tbs. oil


Directions


Preheat oven to 400°F. Pulse cornflakes in a food processor until coarse crumbs form, or place them in a zip-lock bag and crush them with a rolling pin or mallet. Combine cereal with seasonings in shallow dish. Brush chicken lightly with oil, then dredge in cereal mixture, pressing to help adhere, turning to evenly coat both sides. Place the chicken breasts on a rack over a baking sheet, and bake for 20-30 minutes or until the crust is crisp and browned and the chicken is cooked through. (Serves: 4)
