Mexican Chicken Soup

Ingredients


1 Tbs. olive oil


1 onion, chopped


2 cloves garlic, finely chopped


1 red bell pepper, diced


1 qt. Imagine®-Organic Low Sodium Free Range Chicken Broth


1/3 c. fresh lime juice or 1/4 c. fresh lemon juice


1 rotisserie chicken, meat shredded


1 c. Gourmet House® Rice-Organic White, cooked


1 c. tomato, chopped


1/2 c. cilantro, chopped


Coarse salt & fresh ground pepper, to taste


Directions


Cook rice, according to package directions. In large saucepan, heat oil and sauté onion, garlic and bell pepper until softened and fragrant - several minutes. Add the chicken broth; bring to a boil. Add the fresh lime or lemon juice, chicken and rice and bring back to a boil. Add tomatoes and cilantro and turn off heat immediately. Add salt and pepper if desired. Serve immediately and garnish with cilantro, if desired.
