Baked Parmesan Crusted Salmon

Ingredients


1/2 c. mayonnaise


1/3 c. grated parmesan cheese


1/8 tsp. ground red pepper


1/2 tsp. garlic powder


Fresh ground black pepper, as desired


4 salmon fillets


1 lemon


10 gluten free crackers, crushed


Directions


Preheat oven to 400°F. Combine mayo, cheese, garlic powder, pepper, and red pepper; set aside. Lay salmon fillets on a foil-lined baking pan. Squeeze fresh lemon juice over each fillet. Spread each fillet evenly with mayo mixture; dip in cracker crumbs. Bake 12 to 15 minutes or until salmon flakes easily with a fork. (Serves: 4)
