Slow Cooker Pulled Pork with Root Beer Sauce

Ingredients


1 Tbs. olive or vegetable oil


1 (3 lb.) boneless pork loin roast


2 tsp. coarse salt


1/2 tsp. pepper


1 medium onion, chopped


2 (12 oz) cans regular root beer


1 (12 oz) bottle Heinz chili sauce


8 gluten free sandwich buns


Directions


In a 10-inch skillet, heat oil over high heat. Cook pork roast in oil, 6-10 minutes or until brown on all sides. In a 3-4 quart slow cooker, place browned pork roast, 2 tsp. salt, pepper, onion and 1 c. root beer. Cover; cook on LOW 7-8 hours. About 30 minutes before serving, heat remaining root beer, chili sauce and 1/2 tsp. salt to boiling, over medium-high heat in a saucepan or Dutch oven. Reduce heat to medium. Cook 8-10 minutes, stirring occasionally, until mixture is glossy and reduced to 2 1/2-3 c. Remove pork from slow cooker, discarding cooking liquid. Shred pork, using 2 forks to pull pork apart. Stir in chili sauce mixture. Spoon pork mixture onto gluten free buns and serve. (Serves: 8)
