Thai Rice Salad with Peanut Dressing Recipe

Ingredients


1 c. Gourmet House® Rice-Organic White, uncooked


1/3 c. chunky peanut butter


1/4 c. white wine vinegar


3 Tbs. vegetable oil


2 Tbs. KIKKOMAN Gluten-free Soy Sauce


1 Tbs. sugar


1 tsp. grated fresh ginger


2 cloves garlic, minced or pressed


1/4 tsp. cayenne pepper


2 c. Valley Fresh® 100% Natural White and Dark Chicken, chopped


1 cucumber, peeled and chopped


1/2 c. onion, finely chopped


1 1/2 c. fresh spinach, cut into thin strips


Directions


Cook rice according to package directions. Transfer to a large bowl. For dressing, whisk together peanut butter, vinegar, oil, soy sauce, sugar, ginger, garlic, and cayenne. Add chopped chicken, cucumber and onion to rice; mix to combine. Pour dressing over rice mixture and stir to evenly coat all ingredients. Chill. Just before serving, stir in spinach. (Serves: 6)
