Ingredients
2 eggs
2 Tbs. water
Coarse salt & fresh ground pepper, to taste
1 1/2 c. gluten free seasoned bread crumbs
3 Tbs. grated Parmesan cheese
2 lbs. fillet of sole
1/4 c. olive oil
1 lemon, cut into wedges
Heinz tartar sauce, optional
Directions
In a bowl, beat the egg, water, and salt, and pepper to taste. In a separate bowl, mix the bread crumbs and Parmesan cheese. Rinse the fish and cut it into 4- by 2-inch sticks. Lightly coat the fish with the egg wash, then the bread crumbs. Heat the olive oil in a large skillet over medium-high heat. Add the fish and cook until golden, about 3 minutes on each side. Remove the fish from the pan and set on a paper-towel-lined dish. Serve with lemon wedges and tartar sauce. (Serves: 6)
