Chicken Corn Chowder

Ingredients


2 Tbs. Olive Oil


1 lb. boneless skinless chicken breasts, cut into small pieces


1 c. onion, chopped


1 tsp. ground cumin


12 oz. Pacific Natural Foods-condensed cream of chicken soup


1 (10 oz.) can Ro*TelĀ® Original Diced Tomatoes & Green Chilies, undrained


1 c. frozen whole kernel corn


1/2 cup water


Directions


Place olive oil in a large saucepan or Dutch oven over medium-high heat. Add chicken and onion; cook 4 to 5 minutes or until chicken is no longer pink and onion is tender, stirring frequently. Add cumin; cook and stir 1 minute. Add remaining ingredients. Increase heat to high, cover and bring to a boil. Reduce heat to medium-low; simmer 10 minutes. (Serves: 4)
