Ingredients
3 Tbs. extra virgin olive oil
4 cloves garlic, minced
1/2 - 1 tsp. crushed red pepper flakes
1 (28oz.) can crushed tomatoes
Coarse salt, as desired
1 lb. gluten free penne pasta, cooked and drained
1/8 c. Tito's Handmade Vodka
1/2 c. heavy whipping cream
1/4 c. fresh basil, chopped
1/3 c. grated parmesan cheese
Directions
Cook pasta according to package directions and drain. In a large skillet, heat oil over moderate heat. Add garlic and red pepper. Cook and stir until garlic is golden brown. Add tomatoes and salt, bring to a boil. Reduce heat and simmer for 15 minutes. Add vodka, cream and parmesan cheese and bring to a boil. Reduce heat to low and add pasta, toss for 1 minute. Stir in fresh basil and serve. (Serves: 4)
