Parmesan Chicken Sandwiches

Ingredients


4 skinless, boneless chicken breasts


1 egg, beaten


1 Tbs. water


1/3 c. gluten free Italian-style or seasoned dry bread crumbs


2 Tbs. grated Parmesan cheese


1 Tbs. olive oil


1/4 c. Francesco RinaldiĀ® Traditional Marinara Sauce


4 Rudi's Gluten-Free Multigrain Hamburger Buns, cut in half


Directions


Flatten chicken breasts with a mallet to about 1/4-inch thick between 2 pieces of waxed paper. Mix egg and water. Combine gluten free bread crumbs and Parmesan cheese. Dip chicken into egg mixture then in bread crumb mixture. Heat oil in a large skillet over medium heat until hot. Place chicken in hot skillet and cook about 12 minutes turning once, or until cooked through. Remove skillet from heat and sprinkle with additional Parmesan cheese; let stand 1 minute. Serve chicken on toasted buns. (Serves: 4)
