Fiesta Shrimp Creole

Ingredients


2 c. Minute® White Rice or Minute® Brown Rice, uncooked


2 Tbs. vegetable oil


2 Tbs. gluten free, all purpose flour


1 small green bell pepper, chopped


2 stalks celery, chopped


2 cloves garlic, minced


1 jar (16 oz.) chunky salsa


1 can (8 oz.) tomato sauce


1 tsp. hot pepper sauce (optional)


1 1/2 lbs. shrimp, peeled and deveined*


Directions


MIX oil and gluten free flour in large saucepan. Cook over medium heat 6 to 8 minutes or until browned, stirring constantly. ADD bell peppers, celery and garlic; cook and stir 4 minutes or until tender. Stir in salsa, tomato sauce and pepper sauce, if desired; simmer 10 minutes, stirring occasionally. STIR in shrimp; cook 6 to 8 minutes or until shrimp are cooked through. Serve over rice. * Or, substitute fresh boneless skinless chicken, cut into 1/2-inch pieces. (Serves: 6)
