Ingredients


1 lb. ground beef


1 clove fresh garlic-minced


1/2 tsp. cumin


1 Tbs. red chili powder


1/4 tsp. oregano


1/4 tsp. cayenne pepper


1/2 tsp. salt


1/4 tsp. pepper


1/4 c. SPIKES' Medium Salsa


2 Tbs. fresh cilantro-chopped


1 can refried beans


Gluten free yellow corn tortillas


Shredded cheddar cheese, as topping


Shredded lettuce, as topping


Diced tomatoes, as topping


Vegetable oil, for frying


Directions



Fry corn tortillas in vegetable oil until crisp. Place on paper towels to absorb oil. Set aside. Place ground beef in a pan and break up. Add garlic, cumin, chili powder, oregano, cayenne, salt and pepper. Cook until well browned then stir in cilantro and salsa. Heat beans in a small pan. Spread a thin layer of beans on tortilla. Then top with ground beef mixture and cheese. Bake at 350°F until cheese melts. Remove from oven and top with lettuce and tomatoes.
