Crunchy Southwest Pie

Ingredients


2 lbs. lean ground beef (90% lean)


3 Tbs. chili powder


2 Tbs. gluten free all-purpose flour


1 tsp. salt


1 tsp. garlic powder


2 c. water


1 (15 oz.) can pinto beans, rinsed and drained, optional


4 1/2 c. gluten free corn chips


2 c. lettuce, shredded


1 1/2 c. shredded cheddar cheese


3/4 c. tomatoes, chopped


6 Tbs. onion, finely chopped


Sour cream, optional


Minced fresh cilantro, optional


Directions


In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the chili powder, gluten free flour, salt and garlic powder until blended; gradually stir in water. Add the beans, if desired. Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until thickened, stirring occasionally. To serve, divide chips among six serving bowls. Top with beef mixture, lettuce, cheese, tomatoes and onion; garnish with sour cream and cilantro, if desired. (Serves 6)
