Gluten Free Mexican Grilled Cheese Sandwiches

Ingredients


1 medium sweet yellow pepper, chopped


1 medium green pepper, chopped


2 tsp. olive oil


8 Rudi's Gluten-Free Original Bread


2 Tbs. mayonnaise


SPIKES’ Medium Salsa


3/4 c. shredded Mexican cheese blend


2 Tbs. butter, softened


Snikiddy® Baked Fries-Original Seasoning, as a side


Directions


In a small skillet, sauté peppers in oil until tender. Spread four bread slices with mayonnaise. Layer with peppers, cheese and about 1 Tbs. salsa per sandwich. Top with remaining bread. Butter outside of sandwiches. In a small skillet over medium heat, toast sandwiches for 2-4 minutes on each side or until cheese is melted and bread is toasted. Cut each sandwich in half and serve with Snikiddy® Baked Fries-Original Seasoning. (Serves 4)
