Crockpot Roast Beef in Balsamic Cherry Sauce

Ingredients


2 lbs. chuck roast


1 tsp. salt


1 c. onion, chopped


1 c. cherry preserves


2 Tbs. balsamic vinegar


1 c. beef stock or water


Directions


Cut the beef into pieces. Place meat in Crockpot. Sprinkle the meat with salt and toss with onions. Mix together the preserves, vinegar and stock. Pour mixture over meat; cover and cook on LOW for 8 to 10 hours.
