Black Bottom Cupcakes

1 package Namaste Chocolate Cake mix

4 eggs, divided

2/3 c. oil

1 ½ c. water

1 c. semi-sweet chocolate chips

1 (8 oz.) package cream cheese, softened

1/3 c. sugar

1 mixture Cinnamon Sugar Topping (ingredients below)

½ tsp. cinnamon

¼ c. sugar

1/3 c. chopped walnuts (optional)

Note: Increase sugar to ½ c. if not using nuts


Preheat oven to 350° F. Mix together chocolate cake mix with oil, water and 3 eggs as directed on package. In a separate bowl mix cream cheese, 1 egg, 1/3 c. sugar and chocolate chips. Blend well. Spray cupcake pan with non-stick spray or insert paper liners. Fill cups 2/3 full with cake mixture. Add heaping teaspoon of filling to each and top with cinnamon, sugar and chopped walnuts (if using) mixture. Bake in preheated oven for 20-24 minutes. (Makes 24-30 cupcakes)


These can also be made using our Vanilla Cake mix. Or you can top them with our Toffee Vanilla or Chocolate Fudge Frosting instead of the cinnamon sugar topping.
