Salmon with Mango Salsa

4 (6-8 oz.) salmon fillets, 1 inch thick

2 Tbs. sugar

1½ tsp. lime zest

Coarse salt, as desired

¼ tsp. cayenne pepper

1 c. ripe mango, peeled, seeded, and cut into thin bite-size strips

½ of a medium cucumber, seeded and cut into thin bite-size strips

2 green onions, sliced

3 Tbs. fresh lime juice

1 Tbs. fresh cilantro or 2 tsp. snipped fresh mint

1 small jalapeno pepper, seeded and chopped

1 clove garlic, minced


Rinse fish; pat dry. Place fish skins side down in a shallow dish. To make rub, stir together sugar, lime zest, salt, and cayenne pepper. Sprinkle evenly over fish; rub in with your fingers. Cover and marinate in the refrigerator for 4 to 24 hours. For salsa, combine mango, cucumber, green onions, lime juice, cilantro, jalapeno pepper, garlic, and additional salt if desired. Cover and chill until ready to serve.
Preheat grill for medium-high heat. Place fish skin side down, over indirect heat. Cover and grill for 10 minutes per side or until desired doneness. Top salmon with mango salsa and serve. (Serves: 4)
