Crispy Fried Fish

1 egg

1 1/2 c. Redbridge Beer

1 c. gluten free all-purpose flour

1 tsp. garlic powder

Coarse salt & fresh ground black pepper, as desired

1 lb. cod fillets

2 c. EREWHON® - Corn Flakes Cereal, crushed

1 tsp. Tone’s Cajun seasoning

1 quart oil for frying


In a medium bowl, beat together egg, gluten free beer, gluten free flour, garlic powder, salt, and pepper. Place cod in the bowl, and thoroughly coat with the mixture. Pulse cornflakes in a food processor until coarse crumbs form or place them in a plastic bag and crush them thoroughly with a rolling pin. In a separate medium bowl, mix the cornflake crumbs and Cajun seasoning. Dip the cod in the crumb mixture, and thoroughly coat all sides. In a large, heavy skillet or deep fryer, heat the oil to 365°F. Fry until golden brown, and fish flakes easily with a fork. (Serves: 4)
