Ingredients
1 can (15 oz.) black beans, rinsed and drained
1 medium red onion, chopped
1 small yellow bell pepper, chopped
3 tsp. chili powder
¾ tsp. ground cumin
3 medium tomatoes, chopped
1 jalapeno pepper, seeded and finely chopped
1 garlic clove, minced
1 package Rudi's Gluten-Free Pizza Crust
2 cups fresh spinach, chopped
2 Tbs. fresh cilantro, minced
Vermont Pepper Works Hand Crafted Hot Sauce, to taste
½ cup shredded reduced-fat cheddar cheese
½ cup shredded pepper Jack Cheese
Directions
Mash black beans in a small bowl. Stir in the onion, yellow pepper, chili powder and cumin. Combine the tomatoes, jalapeno and garlic in another bowl. Place crust on an ungreased pizza pan; spread with bean mixture. Top with tomato mixture and spinach. Sprinkle with cilantro, pepper sauce and cheeses. Bake according to package directions.
