Ingredients
2 lbs stew meat, cubed
2 Tbs. Better Than Bouillon beef base
2 (14-1/2 oz.) cans diced tomatoes, undrained
1 medium onion, chopped
1 stalk celery, diced
1 1/2 cups potatoes, diced
1 (16 oz.) package frozen mixed vegetables
5-1/2 cups water
Salt & fresh ground black pepper, as desired
1-1/2 cups gluten free mini penne pasta, uncooked
Directions
Brown stew meat in a large stew pot sprayed with cooking spray; cook until meat is tender. Add celery, onion, potatoes, and cook until just tender. Add the tomatoes, frozen vegetables, water, beef base and salt and pepper. Bring to a boil. Simmer 45 to 55 minutes or until flavors blend. Add pasta and cook until pasta is al dente. (Serves: 8)
