Ingredients
Bagged hearts of romaine lettuce, rinsed & torn into bite-sized pieces
2 roma tomatoes, chopped
1 red bell pepper, sliced thin
1 can black beans, rinsed & drained
2/3 cup grated sharp cheddar cheese
2/3 cup frozen corn, thawed
1 package PERDUE® SHORT CUTS® chicken
2/3 cup tortilla chips, crushed as garnish
1 cup Marzetti-Salad Dressing/Ranch or other gluten free Ranch dressing
1/4 cup SPIKES’ Medium Salsa
1/4 tsp. chili powder
1/4 tsp. cumin
Directions
Combine first 7 salad ingredients together in large serving bowl. Mix together ranch dressing, salsa, chili powder and cumin for dressing ingredients in a small bowl. Toss salad with dressing or serve on the side. Garnish with crushed tortilla chips if desired. (Serves: 4)
