Ingredients
1 bag Success® Brown or White Rice
½ cup plain low-fat yogurt
½ cup light sour cream
1 Tbs fresh tarragon, chopped
½ cup melon, diced small
½ cup celery, diced small
½ cup grapes, halved
6 ounces grilled chicken breast, diced
Salt & pepper to taste, optional
Directions
Prepare rice according to package directions. In a medium bowl combine yogurt, sour cream and tarragon; mix well. Fold in rice and remaining ingredients. Salt and pepper to taste, if desired. (Serves: 4)
*Options: Substitute 1 pound grilled shrimp for chicken. Stir in ½ cup chopped water chestnuts, raisins, cranberries or nuts
