Fish Nuggets

½ lb fish fillet (cod or any other firm fish)

1 Tbs lemon juice

3 Tbs milk or substitute

1 egg

2 Tbs Dijon mustard

2 Tbs plain yogurt (regular or Greek)

Coarse salt & fresh ground black pepper

Italian seasoning

Gluten free breadcrumbs or almond meal


Preheat oven to 395°F. Line a baking tray with parchment paper. Cut fish into bite-sized pieces (nuggets). Drizzle with lemon juice. Sprinkle with salt and pepper to taste. In a bowl combine milk, egg, mustard and yogurt. Mix well and add salt and pepper to taste. Dip the fish nuggets into milk mixture; remove and let extra drip off. Combine breadcrumbs and Italian seasoning. Dredge fish in the gluten free breadcrumbs or almond meal on all sides in a thin layer. Repeat with all nuggets. Place them on the baking tray and bake for 10-15 minutes in preheated oven. Turn the oven up to broil and broil until they are golden brown. (Serves: 2)
